This is a recipe I’ve been wanting to throw together on a week night now for ages. On my home yesterday, in an effort to escape a torrential downpour of rain, I popped into Sainsburys and picked up some ingredients. You can use any white fish in the recipe – any you like. I opted for river cobbler as it wa the cheapest. Nope, I hadn’t heard of it either but it still tasted good.
To make it you’ll need:
Two fillets of white fish
2 tbsp curry paste
1 yellow pepper
1 can of chopped tomato
Salt and pepper to season
Rice to serve
1. In a wok or a large frying pan, heat some oil and add in your chopped onions and soften for 3 minutes. Add in you chopped peppers and cook for a further 2 minutes.
2. Chop your white fish into chunks. Add your curry paste to the pan to heat for a minute before add your fish and coating it. Cook for a further five minutes.
3. Add in your chopped tomatoes and any additional seasoning and cook for a further 7-10 minutes.
4. Serve with rice or naan and enjoy!
