Recipe #84: Chilli and ginger fish cakes

This is a recipe I should have shared a long time ago. It’s a simple week night dish, or starter, that’s not only healthy, but packed full of flavour – my chilli and ginger fish cakes.

We all have a stray tin of tuna in the cupboards and potatoes somewhere in the house. Using just five key ingredients you can make something super simple and tasty, for a fraction of the cost of buying shop bought fish cakes.

To make them you’ll need:
1 large or two small sweet potatoes
1 tin of tuna (ideally on water or brine)
1/2 red chilli, seeded and chopped
1/2-1 tsp of grated fresh ginger
A few tbsps plain flour

1. Peel as chop your sweet potato and boil until cooked thorough. Once cooked, drain and mash them and place them to one side.
2. In a mixing bowl combine your ginger, chilli and tuna. Add in your potato and combine well.
3. Place and frying pan on tje job and begin to heat some oil on a medium heat. Either on your work surface or on a plate, lay out your flour. You then want to get your hands into your mixture to create four fish cakes. Covering each of them with flour and placing them into your heated pan of oil.
4. Keep a close eye on your fish cakes and turn after a few minutes. Keep turning and cooking on either side until golden brown.
5. Serve and enjoy!
