Recipe #80: Simple warm goats cheese salad

The second course of our five course dinner the other night was literally thrown together as we chatted to our guests and sipped on mint and cucumber gin and tonics. We all have a mutual love of goats cheese, so I opted for a huge baked lump each, with some peppery rocket salad, roasted vegetables and a homemade dip. It’s perfect on its own, or as part of a main.

To make it you’ll need:
Olive oil, balsamic vinegar, basil and a clove of garlic, combined to make your dressing
Rocket
1 courgette
1 red pepper
Goats cheese

Method:
1. Heat your grill. Chop your courgettes and pepper and lay them out on a baking tray. Drizzle with oil and bake for 15 minutes or until they begin to brown.
2. Turn the veg and make room for your goats cheese. Bake for a few minutes.
3. Put your rocket onto your plate and drizzle with your dressing. Add your roasted veg and drizzle again. Place your goats cheese on top and serve warm.
4. Enjoy!
