Recipe #76: Fisherman’s Eggs

My love affair with sardines continues. Last week they helped me get better (well I defiantly think they helped) so tonight, seeing as I’m eating alone, I road tested a recipe I’ve had my eye on for a while – fisherman’s eggs.

This dish is ideal for brunch or indeed a lazy dinner for one. Nutritionally it’s absolutely jam packed with protein and, teamed with whole meal bread, it’ll give you a good intake of carbs too. I was really impressed – it’s defiantly up there with my Eggs in Purgatory dish.

To make it (for one) you’ll need:
1 tin of sardines
1 garlic clove crushed
½ shallot onion
½ tomato
2 eggs

Method:
1. Preheat the oven to 180 degrees.
2. In a heatproof bowl add your sardines, garlic and chopped shallot and mash with a fork. Cut your tomatoes into small chunks, place on top and bake in the oven for 5 minutes.
3. Remove from the oven and crack your eggs on top, making sure you move the bowl to make sure the base is fully covered.
4. Bake in the oven for 15 minutes then leave to stand for a few minutes.
5. Serve with hot toast.
