Tonight me and Dan are turning off technology, tuning into to a film and eating fajitas! I’m sooooooo excited for fajita and film night. Knowing that at the end of a long week you have something as simple a good film and lazy tea to look forward to is amazing.
I don’t know about you, but making time for your better half can be hard sometimes. Although we’re together. I’m usually tapping away at a blog post and Dan’s thinking about work – it’s a standard week night for us. Quite often we look at each other and wonder, ‘how did we even get like this? When did we get so boring?’ But then we quickly remember that we’re young hard working professionals with proper jobs and responsibility… We’re not too far off normal.
So back to tonight. We’re having fajitas made with thigh chicken instead of breast. With meat being so expensive these days, we’re getting clever at going to cheaper but equally as tasty cuts of meat. Instead of throwing it in the pan, we cook the chicken in the oven for 40 minutes first, then tear off the skin and use a fork to pull off the chicken into think strips. We then mix it it to the vegetables in the pan to keep it warm and allow it to soak up some of the spices. Yum – my mouths already watering at the prospect of cheese, salsa and soured cream!
Film wise? Well we’re undecided. Something epic – maybe something funny.
I can’t wait to get off this train and get home!
