Recipe #64: Garlic, lemon and rapeseed dressing…

During yesterday’s visit to Bakewell Baking Festival, I got chatting to Kate from Brock and Morten – a rapeseed oil company based not too far from Sheffield. They’ve only been up and running since January and in a short space of time have developed a fantastic nutty-oil and some lush branding to boot. All of the rapeseed is grown on their farm just outside Bakewell and, although they use contract pressers at the moment, they hope to have the facilities to produce the oil on their farm.

Kate gave me a bottle to take away – as soon as I got home I got to work on my first recipe – a garlic and lemon dressing to team up with some fresh pasta. The flavour is rich and nutty, which gives any dressing a real earthy flavour… I can’t wait to use it in a cake!

Here’s how to make it. You’ll need:

  • Two big glugs of Brock and Morten Rapeseed Oil
  • 1 garlic clove, crushed
  • 1/2 lemon, squeezed and zested
  • 2 pinches of oregano
  • 3-4 pinches of basil
  • Seasoning

Method:

  1. With a pestle and motar, add in your oil, garlic, lemon and crush. Put in your herbs, mix well and leave to sit for 30 mins to let the flavours mature.
  2. Pour on a salad or team up with pasta!
