Sometimes it’s nice to make and eat a healthy dessert. Lord knows I love anything sweet – but my cravings for sugar can be kept at bay by fruit and creamy yoghurt, just as much as it can be satisfied by naughty cake and chocolate (of which I’ve had far to much of recently).
Instead of chocolate and cake, and to level out the fact that we’d had fish n’ chips AND chocolate the night before – this was our Saturday night dessert treat. Believe me when I say that this tasted as good as it looks. And there’s so much you can do with it. You can include any fruit and any sprinkles you wish. The variations are endless.
To make this, you’ll need:
- Low fat yoghurt
- Some frozen fruits of the forrest – defrosted at room temperature (you can get big boxes of these from Morrisons for £2 – just take out what you need)
- 1 Lemon
- 1 tbspn icing sugar
- Chocolate sprinkles
- In a mixing bowl, add in your plain natural yoghurt and squeeze in the juice of your lemon. It will be very runny, so add in your icing sugar to thicken the mixture again and add a touch of sweetness. You may wish to add more should you want a thicker consistency.
- Leave for cool for a few minutes then spoon in to glasses. Layer up your fruit, with your yoghurt. You may also wish to add in nuts or cereals at this point.
- Pop some fruit on top, add some chocolate sprinkles and dig in!
So easy, and healthy too!
