Recipe #53: Simple post-work chilli

Week 3 of early starts. I am shattered – so my meals are staying simple, and healthy as I resist the urge to throw a pizza in the oven and have done with it.

This is a simple go to recipe for anyone who’s get in from work and wants something quick and yummy to eat. No fancy ingredients. Just mince, homemade sauce, cheese and whatever you want to eat with it – I’m going for a pitta bread, Dan’s having rice!

To make it you’ll need:

  • An onion
  • 1 green pepper
  • Mince
  • Mushrooms
  • Kidney beans
  • 1 can of chopped tomatoes
  • 1 tspn of chilli powder
  • 1/2 tspn paprika
  • Seasoning

Method:

  1. In a deep pan, heat some oil and add in your onions and allow them to soften. Chop your peppers and add them in then pop in your mince and stir until it’s browned.
  2. Once browned, add in your chopped tomatoes, mushroom, kidney beans and combine. Add your chilli powder and paprika and leave to cook for 15 minutes.
  3. Serve with rice, pitta or tacos and enjoy!
