Tonight’s blog post is short and sweet. I’ve had a looooong and busy day. This afternoon I wrote 2500 words in 2 and a half hours… jeez, my hands barely left the keyboard. As a result my eyes hurt, my head hurts and the sooner I can stop typing, the better (sorry)!
Anyhoo… last night we cooked way too much potato. Instead of throwing it away, I decided to make some quick and easy potato cakes tonight. I’ve never made them before, but they can’t be too hard to make surely… so I made it up as I went along… and they tasted great!
To make them you’ll need:
- Some cold potatoes, mashed
- Salt and pepper
- A knob of butter
- Make sure your potatoes are mashed well, until they’re fluffy. Add in your butter and keep mashing and season.
- Add in a tablespoon of flour at a time until your mixture is doughy enough for you to pick up with with your hands and shape into a fall. Once you’ve done this, flatten it to make it into a potato cake. Cover on both side with more flour.
- Heat some oil in a frying pan and place your potato cakes in. Cook on both sides for 3-5 minutes.
- Serve and enjoy!
Tip – add in some onions and cheddar and serve up on some crunchy bread with ketchup for a great lunch or pre-walk breakfast!
